Cooking flank steak in the oven is a quick and easy way to cook this steak. You need just 5 simple ingredients to make this broiled flank steak recipe, and it takes just 5 minutes to prep.

Since my recipes for cooking sirloin steak and filet mignon in the oven are both reader favorites, I thought it would be fitting to show you how to cook flank steak using a similar method as well. (You can also use a broiled steak method if you prefer.)

Whether you think this is the best way to cook flank steak, I'll leave that up to you to decide, but I can tell you with certainty, it's delicious and just perfect when you want something simple.

How To Cook Flank Steak In The Oven

Wondering how long to cook flank steak? I'll walk you through each step on how to make flank steak:

  • Marinate steak. In a small baking dish large enough to hold the steak, whisk together the olive oil, coconut aminos, lime juice, minced garlic, salt, and pepper. Add the flank steak and turn to coat in marinade. Cover and refrigerate steak for at least 2 hours, or up to 24 hours, turning it over halfway through.

TIP: Don't marinate flank steak for longer than a day. It can get mushy if you do.

  • Brown flank steak. After you heat up the grill plan, add the flank steak (shake off any excess marinade) and cook for about 2 minutes per side, until browned with grill marks on both sides.

TIP: The steak will not be cooked through at this step and that's okay! You are just browning the outside.

  • Broil flank steak. Place the pan into the oven under the broiler. Broil to desired doneness. (See cooking times and temperatures below.)

TIP: Times will vary depending on the thickness of your steak. Estimates here are for a 1- to 1.25-inch-thick steak. Use a probe thermometer for best results – set the temperature you want based on the chart for doneness and take it out when it beeps.

  • Rest steak. Transfer the steak to a plate so it doesn't continue cooking and cover and rest 5 minutes before slicing.

FYI: Resting is important for a juicy flank steak (or any steak, for that matter). This helps the juices incorporate into them eat, so they don't leak out when you cut into it.

  • Slice against the grain. Flank steak is ideal sliced as thinly as possible.

*Target temperature is before resting, which will raise temperature by another 5 degrees.

Flank Steak Recipe FAQs

Does flank steak need to be marinated?

The best way to fix flank steak is to marinate before cooking. This will impart major flavor, along with also tenderizing the meat.

The simple flank steak marinade recipe in this post (olive oil, coconut aminos, lime juice, garlic, salt and pepper) can be whipped up in a few minutes and will make cooking flank steak easy and delicious.

These flavors pair well with a flank steak used for Mexican recipes, like a taco salad, but you can also try balsamic steak marinade instead for a different variation.

Can you broil flank steak?

Yes, you can make flank steak in the oven by broiling it. In this flank steak recipe, we're also searing it on the stove to give it nice flavor and color before finishing it off under the broiler.

Can you cook the steak entirely in the oven and skip the stove top?

Yes, you can. However, I highly recommend the stove top to get browning on the outside for flavor – see the flank steak time chart above.

If you really want to broil the steak without browning it first, broil it for 6 minutes, then flip and broil for this much time based on your desired doneness:

  • Rare – 5 more minutes (120 degrees F)
  • Medium rare – 6 more minutes (130 degrees F)
  • Medium – 7 more minutes (140 degrees F)
  • Medium well – 8 more minutes (150 degrees F)
  • Well done – 9 more minutes (160 degrees F)

Use a meat thermometer to double check for the temperatures above. Broiled flank steak temperature will increase by an additional 5 degrees when resting in the next step.

Why cut flank steak against the grain?

It's best to cut flank steak against the grain so that you cut through and shorten the meat fibers. This makes it easier to chew, and is especially helpful for cuts of meat that aren't naturally tender.

Broiled Flank Steak Storage Instructions

Can you make it ahead?

Yes, you can make this ahead. Mix up the flank steak marinade recipe and marinate for up to 24 hours.

Once it's marinated, cooking flank steak in the oven takes just 5-10 minutes depending on how you like your steak.

How to store beef flank steak

Store this broiled flank steak in the refrigerator for 3-4 days.

Can you freeze broiled flank steak?

Yes, you can freeze this flank steak recipe for 2-3 months if you really need to. Let thaw overnight in the refrigerator before reheating. However, since it's so quick to make, it may be better to just prepare it fresh.

How to reheat broiled flank steak

Reheat broiled steak in the oven at 275 degrees F, covered with foil, preferably with a little broth in the baking dish to keep the air around it moist.

  1. In a small baking dish large enough to hold the steak, whisk together the olive oil, coconut aminos, lime juice, minced garlic, salt and pepper. Add the flank steak and turn to coat in marinade.

  3. Preheat the broiler to 500 degrees F (260 degrees C). Place the oven rack about 6 inches from the broil element.

  4. Spray a grill pan on the stove top with oil for 2 minutes, until shimmering. Add the steak, shaking off any excess marinade first, and cook for about 2 minutes per side, until browned with grill marks on both sides.

  5. Place the pan into the oven under the broiler. Broil for 1 minute for rare, 2 minutes for medium rare, 3 minutes for medium, 4 minutes for medium well, or 5 minutes for well done.

    Use a meat thermometer to be sure - 120 degrees F (49 degrees C) for rare, 130 degrees F (54 degrees C) for medium rare, 140 degrees F (60 degrees C) for medium, 150 degrees F (66 degrees C) for medium well, and 160 degrees F (71 degrees C) for well done. Steak temperature will increase by an additional 5 degrees when resting in the next step.

  6. Remove the flank steak from the oven and transfer to a plate. (Do not leave in the pan or they will be overcooked.) Cover and let the steak rest for 5 minutes before slicing against the grain.
